Jeff and I were supposed to grill up some elk tenderloins that Meg brought me back from Wyoming. She had told us to wrap them in bacon first because they’re so lean. We were so excited that we were planning a big meal out of it. I have red potatoes roasting in the oven and bought broccoli to steam. Then I realized I forgot to buy bacon. Oops. We can’t waste the delicious elk tenderloins on less-than-optimal cooking preparations so we’re just going to eat them a different night.
Looks like it’s just potatoes and broccoli for dinner tonight now. That’s a complete meal, right? Hmmm.

I’ve made elk before - you just have to marinate and keep it rare. It’s really lean but delish. Don’t be scared! Even though this is prob too late :)
